Xanthan Simple Syrup

To give a luxurious silky texture to cocktails, this simple syrup (a syrup made by dissolving sugar in water) is thickened slightly with xanthan gum.

Ingredients

  • 1 1/2 cups water

  • 1 1/2 cups sugar

  • 0.5 gram (1/8 teaspoon) xanthan gum

Directions

  1. In a medium saucepan, combine the water and sugar and bring to a boil. Let the syrup cool completely, then transfer to a blender. With the blender on, add the xanthan gum and blend until the syrup is slightly thickened, about 15 seconds. Transfer the syrup to a jar, cover and refrigerate until clear, at least 4 hours or overnight.

The syrup can be refrigerated for up to 1 month.
