There’s just something I especially savor about building up powerful layers of flavor over time to create a big pot of absolutely delicious food. Whether it’s a mole or a gumbo with dozens and dozens of ingredients, a complex chili, a loaf of sourdough bread, or a rustic soup with just a few central flavors, the Dutch oven is nearly always the right piece of equipment for the task. A great Dutch oven lets you maintain precise temperatures and distribute heat evenly so you can focus on the long game of creating a super flavorful dish. Superior ones have well-shaped, heavy lids to help steam circulate. And with the cozy, hearty dishes of fall around the corner, it will be the Dutch oven’s moment to shine. I’ve used a ton of Dutch ovens over the years for many different kinds of cooking. And while there are a number of iconic entries, the one I continually return to is my Made In 7.5-quart oval Dutch oven. Though it’s rarely on sale, this most excellent cookware is currently $60 off. I absolutely love the enameled cast iron oval shape, which offers a ton of surface area for sauteing onions and garlic, creating a roux, or getting a nice sear on some meat. And once you’re moving along with more ingredients, I find that stirring dishes in this roomy pot is a dream. This oven’s nonstick enamel base looks as good as new after years of intense use — at least mine does — and its top still has that like-new shine. On that note, the oven uses what Made In calls its “cloud cover” lid, with little dimples inside to trap steam and moisture and redirect it toward your dish. All in all, this is an incredibly well-thought-out and perfectly executed piece of cookware. Since we’re at the precipice of fall, I’m definitely thinking about all the cozy dishes I will be making soon — and this oval Dutch oven will be the hero of most of them.
