The Chef’sChoice electric knife sharpener uses 100% diamond abrasives that can apply a 20-degree edge or 15-degree for different types of knives. There are two sides to the machine, one that sharpens the knife, and another that hones the blade for a sharp finishing touch. 

The knife sharpener makes it easy to sharpen. It has precision angle guides that reduce some of the guesswork, making it an approachable tool for burgeoning knife enthusiasts yet still powerful enough for professionals. Plus, you can use practically any knife in it. 

In our tests, the Chef’sChoice sharpener produced the sharpest blade, and we appreciated that it can also sharpen serrated knives — a rarity when it comes to home sharpeners. At 10 inches by 4.25 inches by 4.25 inches, it has a bulkier shape to it than most, but it’s worth the investment to keep your blades in razor-sharp condition. 

Even just one pass through this machine yielded near-perfect sharpening. We especially liked the polishing slot, which touches up the edge to make it last longer. Using it was easy after some practice — as with any sharpener — and we found that pulling the knife through at about one second per inch produced the sharpest results. 

When testing the sharpness of each blade, we used the Edge-On-Up Professional Edge Tester tool, which measures how much force is needed to cut through material. The knife sharpened by the Chef’sChoice machine required the least amount of force post-sharpening, at just 150 grams. Compared to pre-sharpening measurements between 700 and 800 grams, that’s an impressive improvement. The Chef’sChoice impressed us every time we used the blade sharpened by this model to cut through paper, chop a carrot into brunoise, and slice a tomato as thinly as possible.
