When testing the sharpness of each blade, we used the Edge-On-Up Professional Edge Tester tool, which measures how much force is needed to cut through material. The knife sharpened by the Chef’sChoice machine required the least amount of force post-sharpening, at just 150 grams. Compared to pre-sharpening measurements between 700 and 800 grams, that’s an impressive improvement.
