What to Buy Grilling & BBQ I Wrote a Bestselling Cookbook on Griddle Cooking and These Are My Favorite Blackstone Accessories Everything you need for outdoor cooking. By Paul Sidoriak Paul Sidoriak As an outdoor cooking lifestyle evangelist, Paul Sidoriak embraces all cooking and keeps up with the equipment and recipes that unite people, whether in the kitchen or on the patio. Food & Wine's Editorial Guidelines Published on November 1, 2024 Photo: Food & Wine / Amazon Outdoor griddles don’t require special ventilation, so unpleasant odors like fish, cooked cabbage, and sauteed onions stay outside the home. When I wrote The Flippin’ Awesome Backyard Griddle cookbook, outdoor griddle cooking was becoming popular for some of the same reasons people love using them today. If you’ve ever cooked in a pan on a kitchen range, you’re more than qualified to cook on an outdoor griddle. As outdoor griddles have increased in popularity, so has the accessory game. Home cooks want griddle accessories similar to what professionals use at a busy diner or the beloved Waffle House. Fortunately, we can say goodbye to messy cooking and cleanup thanks to grease cup liners, sturdy spatulas, and reliable cleaning kits. Today’s griddle and grill accessories make griddle cooking simpler and more fun. These are some of my favorites. Best Blackstone Griddle Accessories on Amazon Blackstone Griddle Top Cutting Board, $29, originally $35 Blackstone Grease Cup Liners, 10-Pack, $5 Blackstone Griddle Seasoning and Conditioner, $9, originally $11 Blackstone 3-Piece Smash Burger Kit, $43, originally $50 Evo 18-Ounce Stainless Steel Oil Sprayer, $20, originally $25 Earlywood 3-Piece Wooden Utensil Set, $44 Ewfen 35-Piece Griddle Accessory Kit, $34, originally $49 Barbecue Future Adjustable Warming Rack, $38, originally $0 Cuisinart Grilling Prep Trays, $22, originally $25 Katbite 5.5-Inch Parchment Paper Squares, $15, originally $20 Aichoof Stainless Steel Taco Holders, 4-Pack, $10 Cuisinart 6-Inch Griddle Scraper, $17, originally $20 Blackstone Griddle Top Cutting Board Amazon $35 $29 at Amazon Incredibly convenient, Blackstone’s griddle-top cutting board has quickly become one of my favorite accessories. It fits any griddle and sits directly on the griddle surface, elevated a couple of inches above the hot cook surface. It’s perfect for dicing hot chicken, chopping veggies, or having a griddle-top place to cut a sandwich or roll a couple of fatty burritos. Blackstone Grease Cup Liners, 10-Pack Amazon $5 at Amazon Blackstone’s rear grease trap has made corralling bacon grease, bits of food, or burned-on items easier than ever. These grease cup liners are removable and sit inside the grease trap. When filled with liquids or food scraps, removing the entire tray and discarding the mess is almost fun compared to cleanup without it. Blackstone Griddle Seasoning and Conditioner Amazon $11 $9 at Amazon Similar to cast iron, most cold-rolled steel griddle tops need to be seasoned before use. Blackstone’s griddle seasoning and conditioner set a precedent and get you cooking with an evenly seasoned surface that’s on its way to being almost nonstick. Simply wipe a thin coat of the seasoning evenly on the griddle surface, ignite the griddle, burn the conditioner off, and repeat the cycle a few times. It’s also great for surface seasoning touch-ups after an occasional deep cleaning. Blackstone 3-Piece Smash Burger Kit Amazon $50 $43 at Amazon There are plenty of ways to smash a burger, but using this smash burger kit is my favorite. I like how the burger press can be used with one hand and works great as a bacon press. The spatula is sturdy, and its beveled edge helps get under the burger's beautiful beef lattice. When it’s time to add cheese to your burger or chopped cheese sandwich, the burger cover helps it melt quicker and more evenly than when left uncovered. Evo 18-Ounce Stainless Steel Oil Sprayer Amazon $25 $20 at Amazon I’ve tried many oil sprayers, and the Evo sprayer is the only one that has consistently provided an even mist of oil to food or cooking surfaces. It is perfect for when you want a little oil on your griddle surface but don’t want food swimming in pools of it. The 18-ounce stainless steel bottle is easily refillable, and I prefer its durability for outdoor use. Earlywood 3-Piece Wooden Utensil Set Amazon $44 at Amazon Some griddles have a nonstick coating that doesn’t play nicely with metal utensils. Earlywood’s 3-piece utensil set is perfect for stirring, scraping, and moving foods around the griddle without leaving any permanent damage to a nonstick cooking surface. Made in the USA, these utensils are durable and have a lifetime warranty. Ewfen 35-Piece Griddle Accessory Kit Amazon $49 $34 at Amazon If you want every available accessory, this 35-piece kit has you covered. From squeeze bottles to egg rings, a cleaning pad, spice shakers, and a carrying case, the only thing missing is your griddle and some food. You likely won’t use every accessory the next time you fire up the griddle, but it’s nice to know you have about as many tools in your arsenal as an accomplished Hibachi chef, should you need them. Barbecue Future Adjustable Warming Rack Amazon $40 $38 at Amazon A must-have accessory for me, this adjustable warming rack expands from 15 to 25 inches and sits directly on your griddle surface. It’s great for draining foods like cooked bacon while keeping warm. Bread and buns can be toasted and kept warm on the rack while cooking burgers or other foods. It also makes a great staging area for cooked foods when feeding a crowd. Cuisinart Grilling Prep Trays Amazon $25 $22 at Amazon Sometimes, shuttling raw and cooked ingredients from the kitchen to the outdoor griddle and back again is more challenging than cooking the meal. To prevent cross-contamination, I use one of the Cuisinart prep trays to bring raw ingredients to my griddle and the other to shuttle cooked foods to the dinner table. The tray’s ridges mean juicy foods can rest without pooling, and the trays stack neatly. Katbite 5.5-Inch Parchment Paper Squares Amazon $20 $15 at Amazon I absolutely love using parchment paper squares for burger making. Great for thick and thin patties, they allow you to press ground meat into the griddle, forming the perfect patty that releases easily from the smasher. Place a square directly on your griddle surface and cook seafood like scallops, salmon, and tuna directly on the paper for additional nonstick qualities. Aichoof 4-Pack Stainless Steel Taco Holders Amazon $10 at Amazon Say goodbye to tippy tacos with this four-pack of stainless steel taco holders. Each one holds two to three tacos, and you can build them directly on the griddle surface and take them right to the plate for restaurant-quality presentation. I like to put plenty of cheese in the stuffed taco shells and cover them with a squirt of water underneath to make everything melty and delicious. Cuisinart 6-Inch Griddle Scraper Amazon $20 $17 at Amazon It only takes a pass or two with the Cuisinart griddle scraper to make short work of any cooked-on foods, sugary sauces, or mysterious griddle leftovers. Similar to what restaurant cooks use, this scraper is burly. Designed for two-handed use, the scraper’s angle, leverage, and results that this scraper achieves are superior to simply using a spatula.
