When you need a quick and healthy side dish or the basis for lunch, it’s impossible to go wrong with a baked sweet potato. But if you’re only making one or two, we prefer to skip heating up our oven and turn to the air fryer. Not only do you save heating up the whole oven, but the air fryer also creates a magically crisp skin on the sweet potato that’s equally as delicious as the flesh itself. Serve these sweet potatoes with a dollop of butter, or get creative with your favorite toppings: go savory with chorizo, cheddar cheese, and scallions, or make it sweet with a sprinkle of cinnamon and brown sugar. Serve this alongside chicken thighs and brussels sprouts, you’ll have an easy dinner ready in no time.

  • How long do you cook a sweet potato in the air fryer?

    We call for a medium sweet potato, which is about 8 ounces, and it took 45 minutes to cook in the air fryer at 375°F. If you have smaller, thinner sweet potatoes, these will cook faster; larger sweet potatoes will take longer. For the most even cooking, flip the sweet potato part way during the cooking.

If using a toaster oven-style air fryer, you might need to adjust the rack to the lowest third of the air fryer to make sure the sweet potato doesn’t hit the top of the air fryer.

Ingredients

  • 2 medium (8-ounce) sweet potatoes, scrubbed and patted dry

  • 1 tablespoon extra-virgin olive oil

  • Kosher salt

  • Butter for serving

Directions

  1. Preheat the air fryer to 375°F.

  2. Prick the potatoes with a fork all over. Rub olive oil onto potatoes and season with salt. Place potatoes in the air fryer and cook for 30 minutes. Flip potatoes over and cook until potatoes are tender and skins are crispy, another 15 to 25 minutes. Remove potatoes from the air fryer, split in half, and serve with butter.
